Cilantro Beef and Noodle Stir Fry by Jim Eaton

Cilantro Sauce

1 bunch Cilantro
3 cloves garlic
½ cup walnuts
¼ cup olive oil
¼ cup water
1 teaspoon ginger
1 teaspoon cumin
1 teaspoon kosher salt

Add all ingredients to a blender or food processor and pulse until smooth.  Reserve the sauce.

Beef and noodle stir fry

1 ½ pounds ground chuck
1 medium onion
1 large red bell pepper
1/3 of a package rice noodles, softened in boiling water for 2 minutes.
1 cup of the noodle water
1 teaspoon Olive oil

Over medium high heat, add the olive oil to a hot sauté pan.  When the oil shimmers, add the beef and sauté for 5 minutes. Stir occasionally but  let the beef develop some color.  Add the onions and red peppers. Cook for another 5-10 minutes until the onions are translucent.  Add the noodles and cilantro sauce. Stir to mix.  Use the reserved noodle water to thin the sauce to desired consistency.  Let the sauce and noodles simmer together for a couple minutes before serving.
